Ulya regional coffees come from the 178-hectare Ulya plantation as well as several hundred smallholders. These are taken to the Ulya mill in the Waghi Valley of Papua New Guinea’s western highlands. Coffees are sorted, depulped, and fermented for 24 hours in tanks without water before being dried on tarpaulins for 3-6 days. The grading system in Papua New Guinea is unique: whereas others simply rely on screen size, coffees in this system are graded by additionally taking into account shape, color, and cup quality. We are impressed with consistent quality improvements year after year in this region, and love the fruit tart acidity present in this cup.
