Hundreds of farmers from surrounding villages deliver their coffee cherries to this station to be processed. After a 48 to 72-hour fermentation, the coffee is washed and then dried on raised beds. We haven’t had a Yirgacheffe in forever. Find us one.”\u003c\/p\u003e\n\u003cp data-block-id=\"83263325-7859-4059-8b46-8b0716055747\"\u003e\u003cstrong\u003eAnd Justin deliverd.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp data-block-id=\"ffaf311a-bb4a-4248-91e0-2343ec122e12\"\u003eOften translated as “Land of Many Springs,\" Yirgacheffe is one of the most famous coffee growing regions for a reason. The floral and tea-like delicacy of the coffees grown there have been enjoyed by coffee lovers for decades.\u003c\/p\u003e\n\u003cp data-block-id=\"2c43e496-0a22-4f1b-979c-91b49a2037e7\"\u003eIn fact, families have grown coffee in the Gedeo highlands of southern Ethiopia since at least the 1920s, usually on small home-garden plots of less than two hectares.\u003c\/p\u003e\n\u003cp data-block-id=\"bf0db7fa-6c25-410b-a643-abaf98afc988\"\u003eJustin’s search eventually led him to Aricha, a washing station with a comeback story of its own.\u003c\/p\u003e\n\u003cp data-block-id=\"b3a569d7-0301-43b9-9cac-780ec47c8f4a\"\u003eA few years ago, the washing station had fallen into disrepair and was essentially abandoned. Local farmers were left to travel far away just to process and sell their cherries they'd worked so hard to grow.\u003c\/p\u003e\n\u003cp data-block-id=\"cfd7a012-5964-4a1e-a984-6cdc3dead598\"\u003eThat was until a man named Faysel Abdosh saw the potential in the station, the history of the region, and the knowledge of the seasoned growers who live there. \u003cstrong\u003eHe decided to make a bet.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp data-block-id=\"106a3d2b-80a6-42cc-a070-7bfd70989299\"\u003eHe purchased the Aricha washing station in 2018 and poured a year's worth of money and sweat into restoring it.\u003c\/p\u003e\n\u003cp data-block-id=\"0002e82f-22ad-496b-8186-90158297d803\"\u003eThat bet paid off.\u003c\/p\u003e\n\u003cp data-block-id=\"4c387de2-2898-4ccd-81ed-bc81490bb8fd\"\u003eThe station began receiving attention from specialty exporters, along with awards for the quality of its coffees. \u003cstrong\u003eToday, Aricha is looked at as a gem of Yirgacheffe, known for consistently putting out delightfully floral and complex coffees.\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp data-block-id=\"7c6a617f-3cde-4b21-b070-13ae6ebdc9fc\"\u003eHundreds of local farmers from surrounding villages deliver their coffee cherries to this station to be processed. And with no longer needing to travel so far away to sell their cherries, those farmers can stay close to home.\u003c\/p\u003e\n\u003cp data-block-id=\"5f3897fb-973c-47f3-86a3-b2b0b319c30c\"\u003eIn addition, Faysel sets aside part of Aricha washing station's profits to share with the farming community, giving growers an incentive to keep improving the quality of the coffee they bring in.\u003c\/p\u003e\n\u003cp data-block-id=\"67343c59-c324-4fdb-b894-0ace21c46863\"\u003eWe're delighted to have a Yirgacheffe back on the shelves (particularly Nathan) and in the drip rotation at our cafes.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan data-sheets-root=\"1\"\u003e\u003cstrong\u003eWe're tasting honeysuckle, sencha, \u0026amp;
