Description
These coffees are a limited release from Quills.
This one is grown by Diego Horta of Acevedo. His
farm sits between two mountains, giving it a
unique environment for growing coffee.
Harvested cherries are first sorted by floating to
remove any defects, then chosen by hand to ensure
only the highest quality cherries are used. They
then undergo 8 days of anaerobic fermentation.
Those cherries are dried first in a mechanical silo,
then sun-dried on raised canopies for 8 to 10 days
to reach an optimal moisture level of around 11%.
Following this, the coffee is rested under tarps for
another 8 days before it was sent to us.
