These coffees are a limited release from Quills.
This one is also grown by our friends Elias and
Shady Barter, who are second generation
producers at the El Vergel Estate in Tolima.
It begins with Supremo coffee cherries, a variety
celebrated for its remarkable size and depth of
flavor. Handpicked at peak ripeness, the cherries
undergo a 4-hour aerobic pre-fermentation. They
are transferred to hermetic tanks under shade,
where they undergo a 96-hour anaerobic
fermentation. This allows the beans to ferment
slowly and evenly, amplifying their natural
sweetness and aroma.
