4 Myths Big Coffee Has Told You

1. MYTH: All Coffee Beans In Your Bag Are The Same Age Or Ripeness

Often not true.

Coffee is actually a fruit, and fruit tastes best when it's ripe. But big coffee companies don't have time for that. Instead of hand-picking, they strip-pick entire trees at once, mixing ripe cherries with unripe ones.

Then typically they will roast everything dark enough to hide the difference. This leads to burnt or bitter flavored coffee.

2. MYTH: Store-Bought Coffee Is Fresh

Also often not true.

Grocery store coffee has a "best by" date, not a "roasted on" date. That coffee could've been sitting there or in the back stock for six months. Coffee has peak flavor a few days after it's roasted, then loses that flavor over the next few weeks.

Without a roast date, you're often buying something that's already past its prime.

3. MYTH: How You Grind Your Coffee Doesn't Matter

Grind size matters more than you might think.

And different ways of brewing require different types of grind, from french press to espresso. Too coarse and your coffee tastes weak and sour. Too fine and it's bitter and harsh.

Most pre-ground coffee is a generic middle-ground that doesn't actually work well for any brewer. If you want your coffee to taste right, the grind has to match what you're using.

4. MYTH: The Darker The Roast, The Stronger The Coffee

Nope.

Strength comes from how much coffee you use, not how dark it's roasted. Darker roasts taste different, but they're not stronger. If you want a stronger cup, use more coffee.

If you want better flavor, use fresh coffee roasted the way it's supposed to be.

How to have a better cup of coffee every day

Big coffee companies have been selling you the same story for decades: pre-ground bags sitting on shelves, roasted dark to hide defects, packaged months ago. They've convinced you this is normal.

But it's not the way coffee should be enjoyed.

Great coffee is roasted fresh. It's sourced from farms that care about quality. It's ground right before you brew it, not months before you buy it.

Quills Coffee has been doing this in Louisville since 2007. We roast everything to order. We source beans that score above 80 points on the Specialty Coffee Association's 100-point scale (the standard the industry actually uses to measure quality.) And we ship it to you within days of roasting, not months.

No gimmicks. No subscriptions you can't cancel. Just fresh coffee, roasted right, delivered on your schedule.

If you're tired of buying old grocery coffee that tastes dull, here's a better option.

How we elevate your daily ritual

Quality you can measure.
We source premium, specialty-grade coffee, meaning 80+ points on the SCA scale. That's the official coffee grading system used by the industry. Above 80 is specialty grade. Best of the best. We don't sell anything below that.

Freshness you can taste.
We roast your coffee after you order it. Not before. It ships within days of roasting. You get it as it reaches peak flavor.

Roasted the way it should be.
We're not hiding defects under dark roasts. We roast to bring out what's actually in the coffee: fruit, chocolate, caramel, whatever the origin and variety has to offer.

Ground how you need it.
Coarse grind for French press, fine grind for espresso? We'll grind it for your brewer. Or we can leave it whole and let you grind it yourself. Your call.

Variety that makes sense.
We taste over 100 exceptional coffees every year and choose around 20 of the best to send to you. A curated rotation so every month is different.

Roasted by hand in small batches. We're not running huge industrial roasters 24/7. Our Roastery team is a small group of 5 people roasting in small 45-lb batches. This means we can dial in each coffee individually and bring out its fullest character.

Still on the fence?

A 12oz bag of grocery coffee costs about the same as 2-3 lattes. But instead of three drinks, you're getting 20-25 cups of cafe-grade coffee that's been roasted within the last week.

Here's what's included:

Premium, specialty-grade coffee (80+ points), roasted fresh in Louisville, Kentucky.

Ground to match your brewer, or left whole.

Delivered on your schedule: weekly, bi-weekly, monthly, whatever works for you.

No lock-in. Swap your coffee, pause, skip, or cancel anytime.

Fresh coffee that's made the way it should be, and tastes the way it's supposed to.

Say goodbye to boring, stale coffee.
Taste the difference.
