Twenty-one years ago, on January 15th, 2005, the F/V Big Valley, a 92-foot crab boat, capsized and sank off the coast of Alaska. Five crew members were lost, including Aaron Marrs, a close friend of our founder, Nathan Quillo. Aaron had ventured up to Alaska to shoot a documentary on the crab fishing industry and this coffee's name is an homage to his company: Paper Jack Films.

When Nathan and Justin set out to develop this coffee, they were thinking about that quiet stretch after the holidays, when the world feels cold and heavy and you’re just looking for something to carry you forward. 

By Quills’ standards, it’s a dark roast, but one crafted to preserve the clarity we’re known for.

We've anchored the blend with Guatemala Guayabales to provide a heavy, chocolatey foundation. Then brought in Ethiopia Aleta Wondo to act as the 'light' in the cup, providing the nuance and sweetness that prevents a dark roast from feeling flat. 

To us, it tastes like a cozy snowy Saturday morning, rich chocolate cake, toasted walnut, and that distinct, aromatic sweetness of almond extract. It’s the perfect cup for the person who loves a bold coffee but is ready to see what specialty roasting is all about.

Paper Jack honors Aaron’s adventurous spirit and offers us a little warmth when we need it most.
